  • 1 mature Camembert wheel (about 250 g)
  • 2 sheets of puff pastry, thawed
  • 125 g apple compote
  • 50 g toasted hazelnuts, roughly chopped

Instructions

  1. Preheat the oven to 200 °C (390 °F). Roll out the puff pastry sheets and cut each into a 20 cm circle.
  2. Place one circle on a baking sheet, set the Camembert wheel in the centre and bake for 10 minutes until the cheese begins to soften.
  3. Meanwhile, spread the apple compote onto the second pastry circle and sprinkle the toasted hazelnuts evenly over the compote.
  4. Remove the first circle from the oven, drizzle a thin layer of honey over the cheese if desired, then place the second pastry circle on top. Seal the edges and brush the surface with a beaten egg.
  5. Return the assembled tart to the oven and bake for an additional 20‑25 minutes, or until the pastry is golden and puffed.
  6. Allow the tart to rest for 5 minutes before slicing into 8 wedges. Serve warm or at room temperature.

Notes

For a vegetarian version, ensure the puff pastry is egg‑free. Hazelnuts can be substituted with almonds or walnuts. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat gently before serving.
